Curry Grilled Chicken

Wow. You probably thought this recipe was super hard. Wrong, it's one of the easiest things you'll make. I recently got some free and delicious Maharajah Curry Spices from Seasonality Spices and wanted to whip up something quick, with a bit of kick (insert laughing emoji).

You can make a curry-flavored grilled chicken with just about any curry spice. Here's what I did:

  • 2 Tbsp Curry Powder

  • 4 Chicken Breasts

  • 1 Tsp Sea Salt

  • 1 Tsp Black Pepper

  • Olive Oil

In a large bowl, sprinkle salt over the chicken then drizzle with EVOO. After this, toss in the curry powder and pepper and mix to coat evenly. If you notice the chicken or spice is dry try adding more EVOO and curry powder. Next, marinate for 30 minutes or a few hours. Toss on the grill with veggies or on the stove top.

My mother, because she's the real cook suggested adding coconut milk to this recipe too. I am going to try this week so stay tuned!
