The Best Recipes I Found On The Internet This Week - Dec. 21

The sweet tooth is turned up to the max this week and the only thing I want is chocolate chip cookies and ice cream. It’s probably because every time I turn on the TV someone is talking about Christmas cookies but I will not cave in. One of my biggest concerns is gaining too much weight this pregnancy so even if the sweet tooth is calling I’m sticking to healthy-ish baking recipes. I googled this week for paleo/vegan desserts and have to tell you each recipe below is absolutely delish and I don’t feel guilty eating it!

Let me just say YUM! I’ve been following Detoxinista for years and adore all of her recipes but I am especially in love with these. Instead of individual cookies, I pressed the dough into a small cookie sheet and baked so I could make “cookie bars.” It’s a great little treat for after dinner and was super easy to make. I wasn’t lying about the sweet tooth this week people. It is real and in charge. I decided to make another treat to keep at work. These Pumpkin Oatmeal cookies are the perfect after lunch snack in my opinion. Pumpkin is packed with Vitamin A and is super low-cal which is good for baby. If you’re prego like me you will feel slight cramping as your uterus expands and pumpkin may help reduce this (FYI - the coconut oil glaze is on point). Recipe here.

Meatballs are like one of my favorites, especially turkey meatballs because they’re super lean. If you’re digging a taste of the Mediterranean then this is your recipe. The lemony sauce is to die for, like so good you could drink it with a straw. I modified this recipe a bit because I didn’t feel like rolling meatballs and switched it to meat patties! Recipe here.

Yes, still eating pumpkin and filling my freezer with healthy treats. These bars are simple to make are a good snack to have throughout the day. I swapped the Medjool dates for honey and the Bob’s Red Mill Flour for Whole Wheat, but I am sure you will enjoy the way the recipe states (I forgot to take a picture)! Recipe here.
